Jelly Donut Cupcakes: Filled with Grape Jelly, Cherry Butter, Strawberry Jelly or Orange Marmalade.
These were really yummy… I think haha. Since I have pretty bad allergies, no matter what, it’s tough to taste the things I have been baking. I trust that my tasters tell me the truth, and so I say these were delicious. The cupcake itself is not too sweet because I think the Jelly or Jam does the trick. I wanted them to be more muffiny then cupcake-ish so I filled the liners to the top and they came out perfect. I can’t wait for everyone to wake up and have these :)

So I am having a tough time not buying EVERY cupcake book I see, but this one has some really great recipes.I figure I can find everything online for free. They shouldn’t make these so darn cute!
Recipe Book
Today I purchased a recipe book so that I could write down all my successful cupcakes. This is helpful because writing things down help me to remember certain ingredients. I got it at Anthro, so it’s really cute.
Also I noticed I have really sloppy handwriting. #thingstoworkon
Red Velvet Cupcake with a chocolate ganache layer and a cream cheese frosting.
The expectations for this cupcake were pretty high. Although delicious, I want to try again with more cream cheese in the frosting and a thinner layer of ganache. I think i’ll cut the cupcake in half next time after it has cooled and place that thin layer there and then just have the frosting on top. I also need to add more cocoa powder to the cupcake mix. It was moist but it was lacking that rich chocolate flavor I enjoy so much from a red velvet.
I always hear these are tough to make, so I am happy my first try was yummy :)
